The raisins are plump and juicy, the walnuts are crunchy and the sourdough is natural and leavened. We proof this bread for a long time to develop its deep, sweet key notes ( like a bassoon). It pairs well with soft cheese and fruits, but we love this dark crusted bread toasted in the morning with creamy rich butter and a cup of tea.
